Ross, I think there is going to be a fair amount of materials in our collection about this topic. I think it is going to mostly be in the records of Cooperative Extension and CALS, but I noticed some things coming up in other sources too, such as the Technician. Materials are primarily dated from the 1980s and later, but maybe there are a few earlier items. The following search terms may be the best way to surface this in our Rare & Unique Digital Collections site:
“migrant farm workers” / “migrant workers” / “migrant farm”
“seasonal farm workers” / “seasonal workers” / ” “seasonal farm”
“seasonal farm workers” / “seasonal workers” / ” “seasonal farm”
The term “farm workers” may be too general, but is another possibility. I think you want to use quotes around your search terms to avoid getting a lot of extraneous items.
I know there are Spanish language extension publications in the collection, but I’m not sure we have digitized those. In fact there are probably a lot of items on the topic of migrant farm labor in the collection that we haven’t digitized yet. You or your students can look through the collections guides, using the same search terms as above, to see what may be in available in the paper collections. You can also try such terms as
Spanish agriculture / Spanish extension
Hispanic agriculture / Hispanic extension
(maybe even Latino agriculture / Latino extension; not sure Latinx would get anything useful)
Here I don’t think I would use quote marks–I don’t think the search results will be be all that many that you couldn’t easily go through them.
